Fighting all day yesterday trying to get this VM to launch into anything beyond 1024×768.

Finally found this:ARTICLE

which explains the grub options necessary in my Ubuntu 16.04 VM to make this happen.  Now my VM full-screens beautifully at 1680×1050.
